A healthy, flourless cake made from a tin of beans…? Yep!

As I was experimenting with gluten free cake options, I stumbled upon the Clevercook, Sarah, who had success using beans in her cakes. Using my Chocolate Bean Pudding as the base and adding a few extra eggs and baking soda etc, the Moist Chocolate Bean Cake was created!

Who would guess this cake contained beans and sweet potato! This lovely Moist Chocolate Bean Cake makes a nice snack, lunchbox treat or birthday cake. Free from gluten, dairy and refined sugar, it’s high in protein, keeping you fuller for longer.

I have found it easier to bake in cupcakes (slightly reduce cooking time) or a tin with a hole in the center for an even cook. Don’t forget you’ll need to whip up a batch of our Chocolate Bean Pudding to make this cake.

Moist Chocolate Bean Cake
Made from our delicious bean pudding, this lovely moist cake makes a nice snack, lunchbox treat or birthday cake. Free from gluten, dairy and refined sugar, it’s high in protein, keeping you fuller for longer.

Ingredients
  1. - 1 quantity of Chocolate Bean Pudding
  2. - 5 eggs
  3. - ¼ cup/30g rapadura sugar
  4. - 1 tsp baking powder
  5. - 1 tsp bi-carb soda
Instructions
  1. 1. Preheat oven to 180C and line a cake tin with baking paper.
  2. 2. Make the Chocolate Bean Pudding as per recipe on our blog link above or in our 'Zest for Living' recipe ebook, reserving 1/3 cup of the mixture to ‘ice’ the cake if desired.
  3. 3. Add remaining ingredients and blend until combined.
  4. 4. Pour into cake tin and bake for 40/50 minutes.
  5. 5. Leave to cool for 10 minutes before removing.
  6. 6. Ice if desired and dust lightly with icing sugar (optional)

  10. 3. Add remaining ingredients and blend (10sec, sp5).
  11. 4. Follow from step 4 above
Notes
  1. - I've found this cake cooks faster and more evenly if baking in a tin with the center missing or as cupcakes.
  2. - You can swap cocoa with cacao and use standard white or brown sugar if you prefer.
